1 plum tomato seeded
2 jalapenos seeded and finely chopped
1/2 cup chopped fresh cilantro
1 clove garlic minced
1 teaspoon salt
3 tablespoons lime juice
2 avocados
In a large bowl, combine tomato, jalapenos, cilantro, garlic, salt and lime juice.
Just before serving, cut each avocado in half. Remove pit. Holding the avocado half in your hand, carefully dice avocado by slicing down to the skin. Gently scoop out diced flesh Mixture can be as smooth or chunky as you wish. Taste and adjust seasonings if necessary. If not serving immediately, cover surface of guacamole directly with plastic wrap to prevent discoloring.
